The first time I saw celeriac in my CSA share, I felt distinctly suspicious of this warty root vegetable. We turned the celeriac over and over in our hands studying its stem and white-fleshed knob, while taking turns guessing where it came from and what it was called.
It wasn't till the following year that we began cooking with the celeriac from our CSA share, and now its one of my favorite vegetables! But more importantly, its a key ingredient is Celeriac soup-- one of my secret get-slim recipes.
Celeriac jumps starts your metabolism like a calorie-kicking ninja! It's excellent in soups, stews and hot dishes, but you can also eat it raw (like in this popular french salad). I suggest making a big pot of this celeriac soup and having 1 cups per day at lunch (paired with a salad or sandwich) for the first week of your get-fit-for-summer exercise schedule. Celeriac Soup (makes about 4 cups)
1 red onion
3 tbsp pasture butter or ghee
1 tbsp dried sage
1 tsp pepper
1 tsp cumin
pinch of sea salt
2 cups broth + 1-2 cups of water
1 can of coconut milk
2 heads of broccoli (or cauliflower)
- Saute onion in butter or ghee
- Add spices
- Add broth
- Roughly drop veggies and add to soup.
- Simmer 20-30 minutes.
- Add coconut milk
Serve hot and enjoy!
